Lavender Butter Sauce for Halibut - Chef Roland Glauser of Charlotte Lane Cafe'

500 ml White Wine
3 oz Chopped Red Onion
1 tsp Chopped Garlic
1/2 oz Fresh Lavender

Reduce to a quarter amount

600 ml 32% cream

Add and reduce to half

1 lb Butter at room temperature

Dice and Slowly whisk into mixture  - Strain Sauce

Season with salt, pepper and lemon

Add 1 tsp fresh lavendar and serve with Scotian Halibut Fillet grilled, poached or broiled!
